Over 35 families produce traditional mezcal within the cooperative, all using recipes and methods passed down through these same families for generations. Banhez Tobala is created by Gonzalo Hernandes Bigotes using Tobala agave fermented with natural yeasts. Tobala is known for its notes of green mango and leather, and the mezcal has a refreshing herbaceous note.
